A seasoned beef tallow and butter blend for wrapping brisket during the stall. Adds richness and helps power through the stall faster. The secret weapon of competition pitmasters.

Ingredients

  • Beef Tallow (rendered)
  • Unsalted Butter
  • Kosher Salt
  • Coarse Black Pepper
  • Garlic Powder
  • Hot Sauce (a few dashes)

Steps

    Melt tallow and butter together over low heat.
  2. 2
    Stir in seasonings.
  3. 3
    When brisket hits the stall (around 160°F internal), place on butcher paper.
  4. 4
    Pour tallow butter over the top and wrap tightly.
  5. 5
    Return to smoker until probe tender (195-205°F).
