A seasoned beef tallow and butter blend for wrapping brisket during the stall. Adds richness and helps power through the stall faster. The secret weapon of competition pitmasters.
Ingredients
- Beef Tallow (rendered)
- Unsalted Butter
- Kosher Salt
- Coarse Black Pepper
- Garlic Powder
- Hot Sauce (a few dashes)
Steps
- 1Melt tallow and butter together over low heat.
- 2Stir in seasonings.
- 3When brisket hits the stall (around 160°F internal), place on butcher paper.
- 4Pour tallow butter over the top and wrap tightly.
- 5Return to smoker until probe tender (195-205°F).
