The Southern secret to incredibly tender and flavourful chicken. The lactic acid in buttermilk gently tenderises while keeping meat moist. Use before smoking, frying, or grilling.

Ingredients

  • Buttermilk
  • Kosher Salt
  • Hot Sauce
  • Garlic Powder
  • Onion Powder
  • Smoked Paprika
  • Black Pepper
  • Cayenne

Steps

    Whisk salt and spices into buttermilk.

    Submerge chicken pieces completely.

    Refrigerate 4-24 hours (overnight is best).

    Remove, shake off excess, and pat dry before cooking.
