Eastern Carolina Vinegar Sauce

Eastern North Carolina-style vinegar sauce. Thin, tangy, and spicy — the original pulled pork sauce. No tomato allowed.

Ingredients

  • Apple Cider Vinegar
  • Red Pepper Flakes
  • Cayenne Pepper
  • Brown Sugar
  • Kosher Salt
  • Black Pepper
  • Hot Sauce (Texas Pete or similar)

Steps

    Combine all ingredients in a jar or saucepan.

    If heating, bring to a simmer and stir until sugar dissolves.

    Let cool and refrigerate at least 4 hours (overnight is better).

    Shake well before using. Splash on pulled pork.
