A simple wet brine for whole chickens or spatchcocked birds. Keeps the breast meat juicy through the smoke. Lemon and herbs add subtle flavor without overpowering.
Ingredients
- Water
- Kosher Salt
- Sugar
- Lemon (sliced)
- Bay Leaves
- Black Peppercorns
- Garlic Cloves (smashed)
- Fresh Thyme
Steps
- 1Bring 1 quart water to a boil with salt and sugar until dissolved.
- 2Remove from heat, add aromatics.
- 3Add remaining cold water and ice to cool quickly.
- 4Submerge chicken and refrigerate 4-8 hours.
- 5Rinse, pat dry, and air-dry in fridge 1-2 hours before smoking."
