Simple Chicken Brine

A simple wet brine for whole chickens or spatchcocked birds. Keeps the breast meat juicy through the smoke. Lemon and herbs add subtle flavor without overpowering.

Ingredients

  • Water
  • Kosher Salt
  • Sugar
  • Lemon (sliced)
  • Bay Leaves
  • Black Peppercorns
  • Garlic Cloves (smashed)
  • Fresh Thyme

Steps

    Bring 1 quart water to a boil with salt and sugar until dissolved.

    Remove from heat, add aromatics.

    Add remaining cold water and ice to cool quickly.

    Submerge chicken and refrigerate 4-8 hours.

    Rinse, pat dry, and air-dry in fridge 1-2 hours before smoking."
