A fiery, aromatic dry jerk blend. Allspice and Scotch bonnet heat are the backbone. Use as a dry rub or mix with oil and citrus for a wet marinade. Essential for smoked jerk chicken.
Ingredients
- Ground Allspice
- Dried Thyme
- Cayenne Pepper
- Black Pepper
- Kosher Salt
- Brown Sugar
- Garlic Powder
- Onion Powder
- Cinnamon
- Nutmeg
- Ground Ginger
- Scotch Bonnet Powder (or Habanero)
Steps
- 1Combine all spices and mix well.
- 2For dry rub: apply generously and rest overnight in fridge.
- 3For wet jerk: mix with oil, lime juice, soy sauce, and green onions.
- 4Smoke low and slow or grill over pimento wood if you can find it.
