Lexington-Style Red Dip

Western North Carolina's tomato-vinegar dip. Thinner than KC sauce but with a ketchup/tomato base that distinguishes it from Eastern NC vinegar sauce. Used on chopped pork shoulder.

Ingredients

  • Ketchup
  • Apple Cider Vinegar
  • Brown Sugar
  • Kosher Salt
  • Red Pepper Flakes
  • Black Pepper
  • Hot Sauce
  • Worcestershire Sauce

Steps

    Combine all ingredients in a saucepan.

    Bring to a simmer over medium heat, stirring until sugar dissolves.

    Reduce heat and cook 10 minutes.

    Cool and refrigerate. Splash liberally on chopped pork shoulder.
