A classic wet brine for smoked turkey. Salt penetrates deep, keeping the breast juicy through the entire cook. The apple cider adds subtle sweetness.

Ingredients

  • Water
  • Kosher Salt
  • Brown Sugar
  • Black Peppercorns
  • Bay Leaves
  • Garlic Cloves (smashed)
  • Apple Cider
  • Fresh Thyme Sprigs
  • Fresh Rosemary

Steps

  1. 1
    Bring 1 quart of water to a boil with salt and sugar. Stir until dissolved.
  2. 2
    Remove from heat. Add peppercorns, bay, garlic, herbs, and cider.
  3. 3
    Add remaining cold water and ice to bring to room temp.
  4. 4
    Submerge turkey, refrigerate 12-24 hours.
  5. 5
    Rinse well, pat dry, and air-dry in fridge 4-12 hours before smoking.
