A classic wet brine for smoked turkey. Salt penetrates deep, keeping the breast juicy through the entire cook. The apple cider adds subtle sweetness.
Ingredients
- Water
- Kosher Salt
- Brown Sugar
- Black Peppercorns
- Bay Leaves
- Garlic Cloves (smashed)
- Apple Cider
- Fresh Thyme Sprigs
- Fresh Rosemary
Steps
- 1Bring 1 quart of water to a boil with salt and sugar. Stir until dissolved.
- 2Remove from heat. Add peppercorns, bay, garlic, herbs, and cider.
- 3Add remaining cold water and ice to bring to room temp.
- 4Submerge turkey, refrigerate 12-24 hours.
- 5Rinse well, pat dry, and air-dry in fridge 4-12 hours before smoking.
