An apple cider wet brine for pork chops and tenderloin. The cider adds subtle sweetness while the salt keeps the lean meat juicy through the cook. A must for thick-cut smoked chops.
Ingredients
- Apple Cider
- Water
- Kosher Salt
- Brown Sugar
- Black Peppercorns
- Bay Leaves
- Fresh Sage
- Garlic Cloves (smashed)
- Fresh Thyme
- Whole Cloves
Steps
- 1Bring water to a boil with salt and sugar until dissolved.
- 2Remove from heat, add cider and aromatics.
- 3Cool completely with ice.
- 4Submerge pork chops 4-8 hours in the fridge.
- 5Rinse, pat dry, and rest 30 minutes before cooking.
