An apple cider wet brine for pork chops and tenderloin. The cider adds subtle sweetness while the salt keeps the lean meat juicy through the cook. A must for thick-cut smoked chops.

Ingredients

  • Apple Cider
  • Water
  • Kosher Salt
  • Brown Sugar
  • Black Peppercorns
  • Bay Leaves
  • Fresh Sage
  • Garlic Cloves (smashed)
  • Fresh Thyme
  • Whole Cloves

Steps

    Bring water to a boil with salt and sugar until dissolved.

    Remove from heat, add cider and aromatics.

    Cool completely with ice.
  4. 4
    Submerge pork chops 4-8 hours in the fridge.
  5. 5
    Rinse, pat dry, and rest 30 minutes before cooking.
