Basic Poultry Rub

A versatile poultry rub with herbs and a touch of sweetness. Works on spatchcocked chicken, turkey, and any bird you throw on the smoker.

Ingredients

  • Smoked Paprika
  • Garlic Powder
  • Onion Powder
  • Kosher Salt
  • Black Pepper
  • Dried Thyme
  • Dried Oregano
  • Brown Sugar
  • Cayenne
  • Lemon Zest (dried)

Steps

    Mix all ingredients together.

    Apply under and over the skin for best results.
  3. 3
    Let rest in fridge 1-4 hours (overnight is ideal).
  4. 4
    Smoke at 275-325°F until skin is crispy and internal temp hits 165°F.
