Two parts coarse black pepper to one part kosher salt. The go-to for pitmasters who want a stronger pepper bark on brisket. Lets the beef shine with a bolder pepper bite than 1:1.
Ingredients
- Coarse Black Pepper (16-mesh)
- Kosher Salt (Morton's)
Steps
- 1Mix 2 parts coarse 16-mesh black pepper to 1 part kosher salt.
- 2Apply liberally to trimmed brisket.
- 3Use a heavy hand — about 1 tbsp per pound of meat.
- 4Rest 30-60 minutes before smoking.
