A classic Japanese-inspired teriyaki with soy, mirin, and ginger. Sweet, salty, and umami-rich. Doubles as a marinade and a finishing glaze. Essential for smoked chicken thighs and salmon.

Ingredients

  • Soy Sauce
  • Mirin
  • Sake (or dry sherry)
  • Brown Sugar
  • Garlic (minced)
  • Fresh Ginger (grated)
  • Sesame Oil
  • Rice Vinegar
  • Cornstarch (for glaze)
  • Water

Steps

    Combine soy, mirin, sake, brown sugar, garlic, ginger, sesame oil, and vinegar.

    Reserve half for glazing. Marinate protein in the other half 2-8 hours.

    For glaze: simmer reserved marinade, add cornstarch slurry, cook until thick.

    Brush glaze on during last 15 minutes of cooking.
