The classic 50/50 coarse black pepper and kosher salt, a.k.a. Dalmatian rub. The only brisket rub Texas purists need. Let the beef do the talking.
Ingredients
- Coarse Black Pepper (16-mesh)
- Kosher Salt (Morton's)
Steps
- 1Mix equal parts coarse 16-mesh black pepper and Morton's kosher salt.
- 2Apply liberally to trimmed brisket — about 1 tbsp per pound.
- 3Don't be shy — use a heavy hand.
- 4Let sit 30 min to 1 hour before smoking.
